Friday’s are supposed to be a day off for me. it works out most weeks and others…well that’s that way it goes. Not only was this past Friday my day off, my kids didn’t have school so I should’ve been able to sleep in. Also, I needed to attend a funeral and I was being treated in the evening to a worship concert by a very special guy who has been one of the biggest supporters in my corner since he was a teenager in youth group when I was the youth pastor. I had a full day ahead so you can imagine my frustration when I woke up with my husband’s alarm at 5:15am only to finally attempt to get out of bed at 6am only to be flattened by the absolutely worse case of vertigo I have ever experienced.

I don’t know if you have ever dealt with vertigo but it is less than fun. I could barely sit without feeling nauseous and if I attempted to look around me, let alone move, my surroundings looked as though I was on a tilt-a-whirl ride. I had to hold onto things to walk from my bed to the stairs. I had to lean against the wall to make it up the stairs. It was awful.
I remembered friends who deal with this mentioning a maneuver I could try so I looked it up and followed the instructions, step-by-step. Initially it made it so much worse. But I went back to bed and laid so still with a weighted eye mask on my eyes, took some meds, and just tried to not be sick.
Around 9:30 I had to go to church to check on why the alarm panel for our security system was having issues and I was only able to drive because I barely turned my head. This was definitely a “Don’t Do This At Home” thing. As long as I relied more heavily on my peripheral than actually turning my head.
While I was resetting the panel at church, the dizziness finally subsided but it was too late to make it to the funeral. And now my stomach felt queasy and all I could think of was getting something that would just plop into my stomach so it might settle down. So what did I do?
Biscuits with sausage gravy.
hallelujah.
I came home and put the frozen Pilsbury biscuits I had in the freezer in the oven and started cooking up the sausage. Truth be told, several weeks ago a friend from northern IL posted her less than stellar experience with making this for the first time and so I thought I would always pictures and send to them. I am so glad I did because it was the best gravy I have ever made. Even my 16 year old thought so!
So, if you have hung with it this long, you may as well spend a bit more time reading the recipe!!
Ingredients:
Biscuits-your choice. Follow package/recipe instructions.
Ground breakfast sausage 2-4 T flour
1-2 C milk
Salt and Pepper to taste
Instructions:
Cook biscuits accordingly. While they are cooking, using a decent sized pan, brown your breakfast sausage and once done, drain most of the grease If necessary. When the sausage is cooked, crumbled well, and drained, sprinkle 1-2 T of flour over the meat and lightly stir. The sausage will look more grey and chalky.

Basically you want the sausage and what grease is left to be absorbed by the sausage. Once that happens, I turn my heat down on the stove to around medium low and add the milk, stirring constantly. It doesn’t usually take long from here maybe 7 minutes. The gravy will thicken as it goes. I also use this time To salt and pepper the gravy. Once you add the milk, it may take 5-7 minutes.

This was just what I needed. It was so good!
