A (Mostly) Family Favorite

Finding meals that give variety and that everyone in my family will eat is not easy. It never fails that the 9 year old will refuse to eat what we have or the oldest will decide he isn't a fan of something in our meal and will fix himself something else. I mean, listen, you may do things differently in your home. Here, we fix one meal. Should you choose to not eat it, nothing else will be fixed for you but you are more than welcome to take care of yourself.


There is one meal that 3 out of the 5 of us really like. The funny part is, my mom used to make it and I always HATED it!! Funny how things change.


So what is this meal? We call it Rice Junk.


Here's what you need, and I am not going to give amounts because I choose to believe that most of you, even if you don't cook much, can look at the ingredients and judge how much to fix for yourself or your own family.


Rice-not minute rice, regular old rice Chicken-whichever you prefer. I usually go for the cheapest whether it is some boneless skinless breasts or tenderloin pieces.

Frozen Veggies A couple eggs-again, based on preference. Sesame Oil Rice Wine Vinegar Butter Seasonings-I like to use parsley, oregano, basil, red pepper/red pepper flakes, sesame seeds, garlic powder and onion powder. You do you.

Water-based on how much rice you are cooking. Soy sauce or whatever you might like on your rice


I have to be honest, I thought I had pictures of every stage, but...well...I did not.

So, I have a picture of the chicken after it is cooked but not of the process. In a skillet, add some butter and sesame oil and start warming. Cut the chicken into bite size pieces and add to the butter/oil mixture. As chicken is cooking, add seasonings to preference and cook through. Remove from skillet.




In the same skillet, add a little more butter, oil and the rice wine vinegar to start warming. Add the desired amount of rice and sort of sauté it for a few minutes until it starts to look brown. At this time you'll add the water to start cooking the rice. Follow the directions for the rice.


While there is still some water, add your frozen veggies.


While this is happening, whisk your eggs with a dash of milk cause you're going to scramble them.


Once the water is absorbed, rice is cooked and the veggies are done, push all the rice to one side of the skillet and pour your eggs in the empty side.



Scramble them...if you don't know how to do that, I'm sorry. KIDDING! Let them bubble and start to cook then stir, mix or whatever. It's called scramble for a reason.


As the eggs are finished, begin to combine everything together. This is really good stuff, my friends!



And there you have it! Rice junk! When I make this, I make a lot. It's one of the few things I will eat as leftovers and the other two in the house eat it up, too.


Also, it's day 3 and I am really excited about this goal to blog every day in March. I have some fun things in store and I think you're going to really enjoy it!

Rice Junk is the best! You can use whatever veggies you have, shred some carrots, add diced celery and onions, some peas, corn or whatever suits you.
